Serves: 12 bites

Ingredients

  1. 2 ripe bananas
  2. 1/2 cup coconut butter
  3. 1/4 cup dark chocolate chips
  4. 1/4 cup shredded coconut
  5. 1/4 tsp sea salt

Instructions

  1. Peel the 2 ripe bananas and slice them into 1-inch thick rounds. You should end up with around 12 slices.
  2. In a small mixing bowl, combine the 1/2 cup coconut butter and 1/4 tsp sea salt. Mix until smooth and creamy.
  3. In a separate bowl, melt the 1/4 cup dark chocolate chips in the microwave or over a double boiler. Stir until smooth.
  4. In a shallow dish, place the 1/4 cup shredded coconut.
  5. Take each banana slice and spread a small amount of the coconut butter mixture onto one side of the banana. This will act as the "glue" to hold the coconut and chocolate in place.
  6. Immediately dip the coconut butter-side of the banana slice into the shredded coconut, pressing gently to adhere. Place the coconut-covered banana slice on a plate or tray.
  7. Drizzle a small amount of the melted dark chocolate over the coconut-covered banana slice. You can use a spoon or piping bag to drizzle the chocolate.
  8. Repeat the process with the remaining banana slices, coconut butter mixture, shredded coconut, and melted chocolate.
  9. Place the finished banana bites in the refrigerator to chill for at least 10 minutes to set the chocolate. Serve chilled and enjoy!

Tips

  1. Choose ripe bananas with brown spots for maximum sweetness and easier slicing.
  2. Ensure your coconut butter is at room temperature for smooth spreading.
  3. Use high-quality dark chocolate chips for a richer flavor and healthier option.
  4. For a more uniform look, use a piping bag or squeeze bottle to drizzle chocolate.
  5. If the coconut butter is too firm, gently warm it in the microwave for 10-15 seconds.
  6. Store these bites in an airtight container in the refrigerator for up to 3 days.
  7. For extra crunch, try toasting the shredded coconut before coating the bananas.
