  9. 1/2 cup vegetable oil

  11. 1 cup boiling water
  12. 1 jar (24 oz) Morello cherries
  13. 2 cups heavy whipping cream
  14. 2 tbsp powdered sugar
  15. Chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper to prevent sticking.
  2. In a large mixing bowl, combine 1 3/4 cups of all-purpose flour, 1 3/4 cups of sugar, 3/4 cup of unsweetened cocoa powder, 1 1/2 teaspoons of baking powder, 1 1/2 teaspoons of baking soda, and 1 teaspoon of salt. Whisk the dry ingredients together until they are well blended.
  3. In a separate bowl, beat 2 large eggs. Then add 1 cup of milk, 1/2 cup of vegetable oil, and 2 teaspoons of vanilla extract. Mix these wet ingredients together until they are fully combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing on medium speed until well combined. Be careful not to overmix.

  11. Repeat the layering process with the second and third cake layers, adding whipped cream and cherries in between each layer. Place the final cake layer on top.
  12. Frost the top and sides of the cake with the remaining whipped cream. Use a spatula to create a smooth finish.
