Prep Time: 15 mins
Cook Time: 25 mins
Total Time: 40 mins
Cuisine: American
Serves: 8 servings

Ingredients

  1. 12 jalapenos, halved and seeded
  2. 1 pound sausage (Italian or breakfast)
  3. 8 slices bacon
  4. 1/2 cup cream cheese
  5. 1/4 cup cheddar cheese, shredded
  6. 1 tablespoon garlic powder
  7. Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (204°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Carefully slice the jalapenos in half lengthwise, using a sharp knife. Remove all seeds and membranes using a small spoon to create a clean pepper boat. Wear disposable gloves to protect your hands from jalapeno oils.
  3. In a medium mixing bowl, combine the ground sausage, cream cheese, shredded cheddar cheese, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  4. Using a small spoon, fill each jalapeno half generously with the sausage and cheese mixture, pressing the filling down gently to ensure it's compact.
  5. Cut each bacon slice in half crosswise. Wrap each stuffed jalapeno half with a half slice of bacon, ensuring the bacon slightly overlaps to secure it in place.
  6. Arrange the bacon-wrapped jalapenos on the prepared baking sheet, with the bacon seam side down to prevent unraveling during cooking.
  7. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the bacon is crispy and golden brown and the sausage is fully cooked.
  8. Remove from the oven and let the jalapeno poppers rest for 5 minutes to cool slightly. The filling will be extremely hot.
  9. Transfer to a serving platter and serve warm as an appetizer or game day snack. Optional: Garnish with chopped fresh parsley or green onions.

Tips

  1. Always wear disposable gloves when handling jalapenos to prevent skin irritation from the capsaicin oils.
  2. For less heat, remove all seeds and white membranes from the peppers.
  3. Use room temperature cream cheese for easier mixing with the sausage.
  4. Choose thick-cut bacon for better wrapping and crispier results.
  5. Place poppers seam-side down on the baking sheet to prevent bacon from unraveling.
  6. Let the poppers rest for 5 minutes after cooking to allow the filling to set and cool slightly.
  7. For extra flavor, experiment with different sausage types like spicy Italian or chorizo.
  8. If you want a lighter version, you can also grill these poppers instead of baking.
