Serves: 4 servings

Ingredients

  1. 1 cup rice
  2. 1/2 cup toor dal (pigeon peas)
  3. 1 onion, chopped
  4. 1 tomato, chopped
  5. 1 cup mixed vegetables (carrots, peas, beans)
  6. 2 tablespoons bisi bele bhath powder
  7. 4 cups water
  8. Salt to taste
  9. 2 tablespoons ghee

Instructions

  1. Rinse the rice and toor dal separately under cold water until the water runs clear. Drain and set aside.
  2. Turn on the Instant Pot and select the Sauté mode. Add a tablespoon of ghee and let it heat up.
  3. Add chopped onions and sauté until they turn translucent and slightly golden brown, approximately 2-3 minutes.
  4. Add chopped tomatoes and mixed vegetables, cooking for another 2 minutes until they start to soften.
  5. Sprinkle bisi bele bhath powder and salt over the vegetables, stirring to coat evenly and release the spices' aromatics.
  6. Add rinsed rice and toor dal to the pot, mixing with the vegetables and spices.
  7. Pour 4 cups of water into the Instant Pot, ensuring all ingredients are submerged.
  8. Close the Instant Pot lid, set the valve to sealing position, and select the Rice/Porridge mode.
  9. Cook on high pressure for 15 minutes, then allow natural pressure release for 10 minutes.
  10. After pressure release, open the lid and stir the mixture gently.
  11. Drizzle remaining ghee on top, mix well, and let it rest for 5 minutes before serving.
  12. Serve hot with a side of raita or papad for a complete meal.

Tips

  1. Rinse rice and lentils thoroughly to remove excess starch and ensure a fluffy texture.
  2. Use fresh, high-quality bisi bele bhath powder for the most authentic flavor profile.
  3. Don't skip the ghee - it adds richness and traditional authenticity to the dish.
  4. For extra vegetables, feel free to customize with seasonal produce like bell peppers or zucchini.
  5. Allow the natural pressure release to help the flavors meld together perfectly.
  6. If you prefer a slightly thinner consistency, add a little extra water before cooking.
  7. Garnish with fresh cilantro or roasted cashews for added texture and flavor.
