Prep Time: 15 mins
Cook Time: 25 mins
Total Time: 40 mins
Cuisine: American
Serves: 4 servings

Ingredients

  1. 1 lb macaroni
  2. 2 cups broccoli florets
  3. 8 slices bacon, cooked and crumbled
  4. 3 cups cheddar cheese
  5. 2 cups milk
  6. 1/4 cup flour
  7. Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add macaroni and cook according to package instructions until al dente, typically 8-10 minutes.
  2. During the last 3 minutes of pasta cooking, add broccoli florets to the same pot to blanch them. This allows the broccoli to cook simultaneously with the pasta.
  3. While pasta is cooking, prepare the bacon. Cook bacon in a large skillet over medium heat until crisp and golden brown, about 6-7 minutes. Remove bacon, drain on paper towels, and crumble once cooled.
  4. In the same skillet with remaining bacon fat, whisk in flour to create a roux. Cook for 1-2 minutes to remove raw flour taste.
  5. Gradually pour milk into the roux, whisking constantly to prevent lumps. Simmer the mixture for 3-4 minutes until it starts to thicken.
  6. Reduce heat to low and add 2½ cups of cheddar cheese, stirring until cheese is completely melted and sauce is smooth.
  7. Drain pasta and broccoli, then return to the pot. Pour cheese sauce over the pasta and broccoli, stirring gently to coat evenly.
  8. Fold in most of the crumbled bacon, reserving some for topping. Season with salt and pepper to taste.
  9. Transfer to a serving dish, sprinkle remaining cheese and bacon on top. Serve hot and enjoy!

Tips

  1. Use sharp cheddar cheese for maximum flavor depth and a more intense cheese sauce.
  2. Cook bacon until extra crispy to ensure maximum crunch and smoky flavor.
  3. Don't overcook the broccoli - blanching keeps it vibrant green and retains nutrients.
  4. Whisk the roux and milk continuously to prevent lumps in your cheese sauce.
  5. Reserve some bacon and cheese for topping to create a visually appealing and extra tasty final presentation.
  6. For a lighter version, you can use turkey bacon or reduce the cheese quantity.
  7. Serve immediately while the cheese is still hot and stretchy for the best texture and taste experience.
