Prep Time: 10 mins
Cook Time: 20 mins
Total Time: 30 mins
Cuisine: Middle Eastern
Serves: 6 servings

Ingredients

  1. 2 red bell peppers
  2. 1 can chickpeas, drained
  3. 1/4 cup tahini
  4. 2 tablespoons olive oil
  5. 2 cloves garlic, minced
  6. 1 tablespoon lemon juice
  7. Salt to taste

Instructions

  1. Preheat your oven to 425°F (220°C). This high temperature will help to char the red bell peppers, enhancing their flavor.
  2. While the oven is heating, prepare the red bell peppers. Rinse them under cold water to remove any dirt, then dry them with a paper towel. Cut each pepper in half lengthwise and remove the seeds and stems.
  3. Place the halved red bell peppers skin-side up on a baking sheet lined with parchment paper. Drizzle with a little olive oil and sprinkle with a pinch of salt.
  4. Roast the peppers in the preheated oven for about 20 minutes, or until the skins are blistered and charred. Keep an eye on them to prevent burning.
  5. Once the peppers are roasted, remove them from the oven and let them cool for a few minutes. After they are cool enough to handle, peel off the charred skin. It should come off easily. Set the roasted peppers aside.
  6. In a food processor, combine the drained chickpeas, tahini, minced garlic, lemon juice, and the roasted red bell peppers. Pulse the mixture a few times to start combining the ingredients.
  7. While the food processor is running, slowly drizzle in the olive oil. Continue processing until the mixture is smooth and creamy. If the hummus is too thick, you can add a little water or more olive oil to reach your desired consistency.
  8. Once the hummus is smooth, taste it and add salt as needed. You can also adjust the lemon juice or garlic to your preference.
  9. Transfer the hummus to a serving bowl. For a beautiful presentation, drizzle a little olive oil on top and garnish with a sprinkle of paprika or chopped parsley, if desired.
  10. Serve the roasted red bell pepper hummus with pita bread, fresh vegetables, or crackers. Enjoy your homemade dip!

Tips

  1. For the most intense flavor, choose ripe, bright red bell peppers with smooth, unblemished skin.
  2. When roasting peppers, ensure they're completely charred - this develops a deeper, smokier taste.
  3. Let the roasted peppers cool slightly before peeling to make skin removal easier.
  4. Use a food processor for the smoothest possible texture, scraping down the sides occasionally.
  5. If the hummus is too thick, add water or olive oil in small increments to achieve your desired consistency.
  6. For extra richness, use high-quality tahini and fresh lemon juice.
  7. Garnish with a drizzle of olive oil and sprinkle of paprika for a restaurant-worthy presentation.
