Total Time: 40 mins
Cuisine: Asian
Serves: 4 servings

Ingredients

  1. 200g shrimp, peeled and deveined
  2. 1 cup tapioca flour
  3. 1 teaspoon salt
  4. 1 tablespoon sugar
  5. Water as needed
  6. Oil for frying

Instructions

  1. Place peeled and deveined shrimp in a food processor and blend until they form a smooth, fine paste. Ensure no large chunks remain.
  2. In a large mixing bowl, combine the shrimp paste, tapioca flour, salt, and sugar. Mix thoroughly until ingredients are well incorporated.
  3. Gradually add water, a little at a time, and knead the mixture into a smooth, elastic dough. The consistency should be firm but not sticky.
  4. Shape the dough into a compact log, approximately 15-20 cm long and 5-6 cm in diameter. Wrap tightly in plastic wrap.
  5. Refrigerate the wrapped dough log for 2-3 hours or overnight to allow it to firm up and develop better texture.
  6. Remove dough from refrigerator and slice into very thin, uniform rounds using a sharp knife, about 2-3 mm thick.
  7. Lay the slices on a clean, dry surface and allow them to air dry for 1-2 hours until they become slightly hardened.
  8. Heat oil in a deep fryer or large wok to 180-190°C (350-375°F). Test oil temperature with a small piece of cracker.
  9. Carefully drop dried cracker rounds into hot oil. They will immediately puff up and expand. Fry for 10-15 seconds until fully crisp and white.
  10. Remove crackers with a slotted spoon and drain on paper towels to remove excess oil. Allow to cool completely.
  11. Store in an airtight container for up to 1 week. Serve as a crispy snack or accompaniment to various Asian dishes.

Tips

  1. • Ensure your shrimp are extremely fresh for the most intense flavor • Use a food processor to create the smoothest possible shrimp paste • Refrigerating the dough helps develop a better texture and makes it easier to slice • Maintain oil temperature between 180-190°C for perfect puffing • Use a sharp knife to create uniform, thin slices for consistent crackers • Allow crackers to air dry before frying to ensure maximum crispiness • Don't overcrowd the frying pan - fry in small batches for best results • Drain on paper towels immediately after frying to keep crackers crisp • Store in an airtight container to maintain freshness and crunchiness
