Prep Time: 10 mins
Cook Time: 25 mins
Total Time: 35 mins
Cuisine: American
Serves: 6 servings

Ingredients

  1. 1 cup lentils, rinsed
  2. 4 cups vegetable broth
  3. 1 small head of cabbage, chopped
  4. 2 carrots, diced
  5. 1 onion, chopped
  6. 2 cloves garlic, minced
  7. 1 tsp thyme
  8. Salt and pepper to taste

Instructions

  1. Prepare all ingredients by rinsing lentils thoroughly, chopping cabbage into bite-sized pieces, dicing carrots, chopping onion, and mincing garlic cloves.
  2. Turn on Instant Pot and select the Sauté function. Add a small amount of olive oil to the bottom of the pot.
  3. Sauté chopped onions and garlic for 2-3 minutes until they become fragrant and slightly translucent, stirring occasionally to prevent burning.
  4. Add diced carrots and continue sautéing for an additional 2 minutes to develop flavor.
  5. Pour in vegetable broth and add rinsed lentils, stirred thoroughly to combine ingredients.
  6. Sprinkle dried thyme, salt, and pepper into the pot, mixing well to distribute seasonings evenly.
  7. Add chopped cabbage on top of the mixture, but do not stir.
  8. Close the Instant Pot lid, set valve to sealing position, and select Manual/Pressure Cook mode for 10 minutes at high pressure.
  9. Once cooking cycle completes, allow natural pressure release for 5 minutes, then carefully do a quick release of remaining pressure.
  10. Open lid, stir soup thoroughly, and taste to adjust seasonings if needed.
  11. Serve hot, optionally garnishing with fresh parsley or a drizzle of olive oil.

Tips

  1. Prep Ahead: To save time, chop your vegetables and rinse the lentils ahead of time. You can store them in the fridge until you're ready to cook.
  2. Sauté for Flavor: Don’t skip the sautéing step! Cooking the onions and garlic first enhances the soup's flavor, making every spoonful more delicious.
  3. Use Fresh Herbs: If you have fresh thyme on hand, feel free to substitute it for dried thyme. Fresh herbs can elevate the taste even further.
  4. Adjust Consistency: If you prefer a thicker soup, simply blend a portion of it with an immersion blender before serving. For a thinner consistency, add more vegetable broth.
  5. Garnish Creatively: Elevate your soup by garnishing it with fresh parsley, a drizzle of olive oil, or even a sprinkle of red pepper flakes for a kick.
  6. Storage Tips: Leftovers can be stored in an airtight container in the fridge for up to 5 days or frozen for up to 3 months. Just reheat on the stove or in the microwave when you’re ready to enjoy!
