Prep Time: 20 mins
Cook Time: 60 mins
Total Time: 1 hrs 20 mins
Cuisine: Chinese
Serves: 4 servings

Ingredients

  1. 1 whole duck (about 4-5 lbs)
  2. 2 tbsp soy sauce
  3. 1 tbsp hoisin sauce
  4. 1 tbsp five spice powder
  5. 2 cloves garlic, minced
  6. 1 inch ginger, sliced
  7. Salt to taste
  8. 1 cup water

Instructions

  1. Begin by preparing the duck. Rinse the whole duck under cold water and pat it dry with paper towels. Trim any excess fat from the cavity and neck area.
  2. In a small bowl, mix together the soy sauce, hoisin sauce, five spice powder, minced garlic, and sliced ginger to create a marinade.
  3. Rub the marinade all over the duck, making sure to get it into the cavity and under the skin where possible for maximum flavor. Sprinkle salt to taste on the outside and inside of the duck.
  4. Once the duck is well coated, let it marinate for at least 20 minutes. For best results, cover it and refrigerate for several hours or overnight.
  5. After marinating, place the trivet inside the Instant Pot. Pour 1 cup of water into the pot.
  6. Carefully place the duck on the trivet, breast side up. Ensure that it fits comfortably in the pot with the lid able to close securely.
  7. Seal the Instant Pot lid and set the valve to the sealing position. Select the 'Manual' or 'Pressure Cook' setting and set the cooking time for 60 minutes at high pressure.
  8. Once the cooking time is complete, allow the Instant Pot to naturally release pressure for about 10-15 minutes. After that, carefully switch the valve to the venting position to release any remaining pressure.
  9. Open the Instant Pot lid and carefully remove the duck using tongs. It will be very hot. Place the duck on a cutting board and let it rest for about 10 minutes before carving.
  10. While the duck is resting, you can strain the cooking liquid in the pot to remove any solids. This can be used as a sauce or broth.
  11. Carve the duck into serving pieces and serve it warm with the strained liquid or your favorite side dishes.

Tips

  1. Choose the Right Duck: Select a fresh, high-quality whole duck weighing 4-5 lbs for the best results.
  2. Pat Dry for Crispy Skin: Thoroughly dry the duck with paper towels before marinating to help achieve a more crisp exterior.
  3. Marinate Overnight: While 20 minutes works, marinating the duck for several hours or overnight will dramatically enhance the flavor penetration.
  4. Don't Skip the Five-Spice Powder: This key ingredient provides an authentic Chinese flavor profile that makes the dish truly special.
  5. Natural Pressure Release: Allow the Instant Pot to naturally release pressure for 10-15 minutes to keep the meat tender and juicy.
  6. Resting is Crucial: Let the duck rest for 10 minutes after cooking to allow the juices to redistribute, ensuring maximum moisture.
  7. Optional Finishing Touch: For extra crispy skin, consider briefly broiling the duck in the oven after Instant Pot cooking.
