Prep Time: 10 mins
Cook Time: 30 mins
Total Time: 40 mins
Cuisine: Indian
Serves: 4 servings

Ingredients

  1. 1 cup toor dal (split pigeon peas)
  2. 2 cups mixed vegetables (carrots, beans, potatoes)
  3. 1 onion, chopped
  4. 2 tomatoes, chopped
  5. 2 tablespoons sambar powder
  6. 4 cups water
  7. Salt to taste
  8. 2 tablespoons oil

Instructions

  1. Rinse the toor dal thoroughly under cold water until the water runs clear. Drain and set aside.
  2. Prepare all vegetables by washing and chopping them into medium-sized chunks. Include carrots, beans, and potatoes as specified in the ingredient list.
  3. Place the inner pot of the Instant Pot and select the Sauté mode. Add oil and let it heat for 30 seconds.
  4. Add chopped onions and sauté until they turn translucent and light golden brown, approximately 2-3 minutes.
  5. Add chopped tomatoes and continue sautéing for another 2 minutes until they become soft and slightly mushy.
  6. Add sambar powder and mix well, allowing the spices to release their aromatic oils for about 30 seconds.
  7. Add rinsed toor dal, mixed vegetables, water, and salt. Stir all ingredients together thoroughly.
  8. Close the Instant Pot lid, set the valve to sealing position, and select Manual/Pressure Cook mode.
  9. Cook on high pressure for 12-15 minutes, depending on the desired consistency of vegetables.
  10. Allow natural pressure release for 10 minutes, then carefully do a quick release for remaining pressure.
  11. Open the lid and gently stir the sambar. If too thick, add a little hot water to adjust consistency.
  12. Taste and adjust salt or sambar powder as needed. Let it rest for 5 minutes before serving.
  13. Serve hot with steamed rice, dosa, or idli, garnished with fresh cilantro leaves if desired.

Tips

  1. Dal Preparation: Always rinse toor dal thoroughly to remove excess starch and ensure a smooth, creamy texture.
  2. Vegetable Selection: Use fresh, seasonal mixed vegetables for the best flavor and nutrition. Cut them into uniform sizes for even cooking.
  3. Spice Technique: Toast the sambar powder briefly to enhance its aromatic oils and develop a deeper flavor profile.
  4. Pressure Cooking: The 12-15 minute cooking time is crucial - don't overcook to maintain vegetable texture.
  5. Consistency Matters: If the sambar is too thick, add hot water gradually. If too thin, use the Sauté mode to reduce slightly.
  6. Flavor Boost: For an authentic touch, consider adding a tempering of mustard seeds, curry leaves, and a pinch of asafoetida after cooking.
  7. Make-Ahead Friendly: This sambar tastes even better the next day, so don't hesitate to prepare in advance.
