Serves: 12 bars

Ingredients

  1. 1 cup dates, pitted
  2. 1 cup peanuts
  3. 1/2 cup almond butter
  4. 1/4 cup cocoa powder
  5. 1/4 cup maple syrup
  6. 1/2 cup dark chocolate, melted

Instructions

  1. Begin by preparing your ingredients. Measure out 1 cup of pitted dates, 1 cup of peanuts, 1/2 cup of almond butter, 1/4 cup of cocoa powder, and 1/4 cup of maple syrup. Also, measure 1/2 cup of dark chocolate for melting later.
  2. In a food processor, combine the pitted dates and peanuts. Pulse the mixture until the dates and peanuts are finely chopped and start to clump together. You want a sticky, dough-like consistency.
  3. Add the almond butter, cocoa powder, and maple syrup to the food processor. Blend the mixture until all ingredients are well incorporated and the mixture is smooth and sticky. You may need to scrape down the sides of the processor a few times to ensure everything is mixed evenly.
  4. Line an 8x8 inch baking dish or a similar-sized pan with parchment paper, allowing some overhang for easy removal later.
  5. Transfer the mixture from the food processor into the lined baking dish. Use a spatula or your hands to press the mixture firmly and evenly into the bottom of the dish. Make sure it is packed tightly to hold together when cut into bars.
  6. Place the baking dish in the refrigerator for about 10 minutes to allow the base to firm up slightly.
  7. While the base is chilling, melt the dark chocolate. You can do this by placing the chocolate in a microwave-safe bowl and microwaving in 20-second intervals, stirring in between, until fully melted and smooth. Alternatively, melt the chocolate using a double boiler on the stove.
  8. Once the base is firm, remove it from the refrigerator and pour the melted dark chocolate over the top. Use a spatula to spread the chocolate evenly across the surface.
  9. Return the baking dish to the refrigerator for an additional 5-10 minutes, or until the chocolate has hardened.
  10. Once the chocolate is set, lift the bars out of the baking dish using the parchment paper overhang. Place on a cutting board and cut into 12 equal bars using a sharp knife.
  11. Store the Raw Snickers Bars in an airtight container in the refrigerator for up to a week, or freeze for longer storage. Enjoy your delicious, vegan, gluten-free treat!

Tips

  1. Use Medjool dates for the best texture and natural sweetness - they're softer and blend more smoothly than other varieties.
  2. For a smoother base, ensure your dates are fresh and soft. If they're too dry, soak them in warm water for 10 minutes before using.
  3. When melting chocolate, go slow and steady. Use low heat or microwave in short bursts to prevent burning.
  4. For perfect cutting, use a sharp knife and wipe it clean between cuts for neat, professional-looking bars.
  5. Want extra crunch? Roughly chop some additional peanuts and sprinkle them on top of the melted chocolate before it sets.
  6. These bars can be stored in the freezer for up to 3 months, making them a perfect make-ahead treat!
