Prep Time: 20 mins
Cook Time: 25 mins
Total Time: 45 mins
Cuisine: American
Serves: 4 servings

Ingredients

  1. 2 large sweet potatoes
  2. 1 can black beans, drained and rinsed
  3. 1/2 cup breadcrumbs
  4. 1 teaspoon chili powder
  5. 1/2 teaspoon cumin
  6. Salt to taste
  7. Pepper to taste
  8. 4 burger buns

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash the sweet potatoes thoroughly. Prick them several times with a fork to allow steam to escape during cooking.
  3. Place the sweet potatoes on the prepared baking sheet and roast in the preheated oven for about 25 minutes, or until they are tender and easily pierced with a fork. Once done, remove from the oven and let them cool slightly.
  4. While the sweet potatoes are roasting, drain and rinse the black beans under cold water. Place them in a large mixing bowl and mash them with a fork or a potato masher until mostly smooth, leaving some chunks for texture.
  5. Once the sweet potatoes are cool enough to handle, peel off the skin and add the flesh to the bowl with the mashed black beans.
  6. Add the breadcrumbs, chili powder, cumin, salt, and pepper to the mixture. Stir everything together until well combined. The mixture should be moist but firm enough to hold its shape. If it’s too wet, add more breadcrumbs as needed.
  7. Divide the mixture into four equal portions and shape each portion into a patty, about 1 inch thick.
  8. In a non-stick skillet, heat a little oil over medium heat. Once hot, add the patties to the skillet. Cook for about 5-6 minutes on each side, or until they are golden brown and heated through.
  9. While the patties are cooking, you can toast the burger buns in the same skillet or in a toaster until they are lightly browned.
  10. Once the patties are cooked, assemble your burgers by placing each patty on a toasted bun. Add your favorite toppings such as lettuce, tomato, avocado, or spicy sauce.
  11. Serve the spicy sweet potato burgers warm and enjoy your delicious meal!

Tips

  1. Moisture is Key: Make sure your patty mixture isn't too wet. If it feels too loose, add extra breadcrumbs to help bind the ingredients.
  2. Don't Rush the Roasting: Take your time roasting the sweet potatoes. The caramelization adds incredible depth of flavor to your burger.
  3. Get That Perfect Crisp: Use a non-stick skillet and don't overcrowd the pan to ensure each patty gets a beautiful golden-brown crust.
  4. Customize Your Toppings: While the recipe is delicious as-is, feel free to get creative with toppings like spicy aioli, pickled onions, or a tangy slaw.
  5. Make Ahead Friendly: You can prepare the patty mixture in advance and store it in the refrigerator for up to 24 hours before cooking.
  6. Freezer Hack: These burgers freeze beautifully! Make a double batch and freeze uncooked patties between sheets of parchment paper for quick future meals.
