Prep Time: 15 mins
Cook Time: 20 mins
Total Time: 35 mins
Cuisine: British
Serves: 8 scones

Ingredients

  1. 250g all-purpose flour
  2. 50g sugar
  3. 2 tsp baking powder
  4. 1/2 tsp salt
  5. 60g cold butter, cubed
  6. 150ml milk
  7. 1 cup mixed berries
  8. 1 tbsp fresh rosemary, chopped

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Whisk together until well mixed.
  3. Add the cold cubed butter to the dry ingredients. Using your fingertips or a pastry cutter, work the butter into the flour mixture until it resembles coarse breadcrumbs.
  4. Gently fold in the chopped fresh rosemary, distributing it evenly throughout the mixture.
  5. Create a well in the center of the dry ingredients and slowly pour in the milk. Mix with a fork or wooden spoon until a soft dough forms.
  6. Carefully fold in the mixed berries, being gentle to avoid crushing them and turning the dough completely purple.
  7. Transfer the dough onto a lightly floured surface and gently pat into a round disc about 2 cm thick.
  8. Cut the disc into 8 equal wedges using a sharp knife.
  9. Place the scones on the prepared baking sheet, leaving some space between each one.
  10. Optional: Brush the top of each scone with a little extra milk for a golden finish.
  11. Bake in the preheated oven for 18-20 minutes, or until the scones are golden brown and a toothpick inserted comes out clean.
  12. Remove from the oven and let cool on a wire rack for 10 minutes before serving.

Tips

  1. Keep your butter ice-cold - this is the secret to achieving those signature flaky layers.
  2. Handle the dough as little as possible to prevent tough scones.
  3. Use fresh, high-quality berries for the most vibrant flavor.
  4. Don't overmix the dough - stop mixing as soon as the ingredients are just combined.
  5. For extra richness, you can substitute some milk with heavy cream.
  6. If berries are very juicy, toss them in a little flour before adding to prevent color bleeding.
  7. Let the scones cool slightly before serving to allow the texture to set perfectly.
