Prep Time: 15 mins
Cook Time: 30 mins
Total Time: 45 mins
Cuisine: Indian
Serves: 4 servings

Ingredients

  1. 1 lb pork, cubed
  2. 1 cup rice
  3. 1 onion, chopped
  4. 2 cloves garlic, minced
  5. 2 tbsp curry powder
  6. 1 can coconut milk
  7. Salt and pepper to taste
  8. 2 tbsp vegetable oil

Instructions

  1. Begin by gathering all your ingredients: 1 lb of cubed pork, 1 cup of rice, 1 chopped onion, 2 minced garlic cloves, 2 tbsp of curry powder, 1 can of coconut milk, salt and pepper to taste, and 2 tbsp of vegetable oil.
  2. In a medium saucepan, bring 2 cups of water to a boil. Once boiling, add the 1 cup of rice, a pinch of salt, and reduce the heat to low. Cover the saucepan and let the rice simmer for about 15-20 minutes or until the water is absorbed and the rice is tender. Once done, remove from heat and let it sit covered.
  3. While the rice is cooking, heat 2 tbsp of vegetable oil in a large skillet or pot over medium-high heat. Once the oil is hot, add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  4. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes, stirring frequently to prevent burning.
  5. Next, add the cubed pork to the skillet. Season with salt and pepper to taste. Cook the pork for about 5-7 minutes, stirring occasionally, until it is browned on all sides.
  6. Sprinkle the 2 tbsp of curry powder over the pork and stir well to coat the meat evenly with the spices. Cook for another 1-2 minutes to toast the spices slightly.
  7. Pour the can of coconut milk into the skillet, stirring to combine all ingredients. Bring the mixture to a gentle simmer.
  8. Reduce the heat to low and cover the skillet. Let it simmer for about 15 minutes, allowing the flavors to meld and the pork to become tender.
  9. After 15 minutes, taste the curry and adjust seasoning with additional salt and pepper if necessary.
  10. Once the rice is ready, fluff it with a fork and serve it on plates or in bowls. Spoon the curried pork mixture over the rice.
  11. Garnish with fresh herbs like cilantro if desired, and serve hot.

Tips

  1. Choose the right cut of pork: Use pork shoulder or pork loin for the most tender results.
  2. Toast your curry powder briefly to enhance its flavor profile and release its aromatic oils.
  3. Don't rush the simmering process - low and slow cooking helps the meat become incredibly tender and allows the spices to fully develop.
  4. For extra depth, consider adding a splash of fresh lime juice just before serving to brighten the flavors.
  5. If you prefer a thicker sauce, you can mix a teaspoon of cornstarch with a little cold water and stir it in during the final minutes of cooking.
  6. Fresh herbs like cilantro or mint can add a wonderful finishing touch to this dish.
  7. Leftovers can be stored in the refrigerator for 2-3 days and often taste even better the next day as the flavors continue to meld.
